Because painters can not put all historical detail in one painting or make a painting clear without it, they often used symbolism.
(example- You can't tell the ram is caught in a thicket, but you know its there. Abraham is not cocking his head listening to the Angel of the Lord's voice from Heaven, etc... It was also extremly common during Caravaggio's era to paint people as if they were in the present day. This brought it more real to the viewers.)
Can you believe that a lot of these amazing painters who created such beautiful work couldn't even read the Bible? And these were scholars. What about all the people viewing their work? So many might only know through what they'd been taught, not the actual word of God.

Very good artist, but I've always been annoyed by the inaccuracy of most Scriptural paintings.
